Upon Mark's instruction, this "green" beer is then "racked" (put) into firkins and kilderkins (barrels and bigger barrels respectively). From here the barrels are locked away in the "cold-store" (a store that is not particularly cold) while it changes colour and is no longer green. The length of its incarceration depends on the strength of the beer.
