After a very enthusiastic reception last July, Dark Star will be brewing their unusual elderflower ale, Hylder Blonde again this July. Dark Star’s brewer, Mark Tranter, has built a reputation for himself for taking the late hopping of ales to heights not expected from an English brewery but in this ale, it’s the local downland elderflowers that are used in copious quantities.
The 4.2% abv beer is brewed with the restrained bitterness of Saaz hops and presents summery taste and aroma not dissimilar to the finest Muscadet wines.
Commenting, Mark said: “It’s sometimes a fine line between flavours that complement and those that fight and we experimented with several hop varieties and mixtures of malts before settling upon this seemingly eclectic mix of ingredients.”
